Applesauce muffins

Applesauce muffins

This recipe would work with applesauce made from crab apples or regular apples, store bought or homemade by you, so give it a go!

Ingredients:
1/2 c sugar
1/3 c brown sugar
1/2 Tbsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 c unsweetened applesauce
1/2 c (one stick) melted butter
1 duck egg
1 tsp vanilla extract
1 1/2 c flour

Optional: if using applesauce made of crab apples, replace 1/4 c of applesauce with 1/4 c maple syrup. 

Instructions:
Preheat the oven to 350 F. Sift together the sugar, brown sugar, baking soda, cinnamon, nutmeg and salt.

Add the applesauce (and maple syrup if using) and cream together until smooth.

Then add the melted butter, duck egg (or two chicken eggs), and vanilla. Mix until beaten in.

Finally add the flour and mix until just combined.

Bake for 20-22 minutes in muffin tins until a toothpick comes out clean. Allow to rest and cool for 5 minutes and then enjoy with butter and a cup of your favorite tea 🤍
