3-2-1 Crêpes

3-2-1 Breakfast Crêpes

Makes: 8 crêpes



3 Duck Eggs

2 Cups Milk

1 Cup All-Purpose Flour

1 Tablespoon Sugar

2 Tablespoons Butter (Melted) + 1 Tablespoon for the Pan

Toppings (optional, see below)


Melt 1 tablespoon butter in a cast iron skillet or crêpe pan, medium heat.

Crack 3 duck eggs into a pouring bowl, whisk until smooth. 

Add 2 cups of milk. Add 2 tablespoons of melted butter. Wisk until combined.

Add 1 tablespoon of sugar. Add 1 cup of flour. Wisk or blend until totally smooth. 

Pour 1/4 cup of batter into the pan. Tilt the pan to coat the bottom with a thin layer of batter. In 2-3 minutes, once the bottom is golden brown and the top has solidified, flip. After 2 minutes remove from pan. 

Add toppings and serve hot.
