Soft Gingerbread Cookies
Makes: 22 cookies
Ingredients:
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup butter, softened
1 cup white sugar
1 duck egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar
Directions:
Preheat oven to 350°F. Combine the flour, ginger, baking soda, cinnamon, cloves, and salt.
Whip together the butter and 1 cup sugar until light and fluffy. Beat in the duck egg, then stir in the water and molasses. Gradually add the sifted ingredients into the molasses mixture. Shape dough into tablespoon sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
Bake 8-10 minutes. Cool 5 minutes before transferring to a cooling rack or your mouth.
