Strawberry Scones

This strawberry scones recipe is easy and quick, even if you don’t do every step perfectly. Replace the strawberries with blueberries and a tsp of lemon zest too and it also turns out great!

Makes: 8

2 c flour
1/4 c sugar
1 Tbsp baking powder
1/2 tsp salt
6 Tbsp cold butter
2 duck eggs
1/3 c half and half
1 tsp vanilla
1 c chopped fresh strawberries
Confectioner’s sugar (for topping)

Mix together dry ingredients. Cut in butter until the consistency is crumbly. Whisk together wet ingredients in a small bowl. Add wet to dry ingredients and mix until combined. Fold in strawberries. On a powdered surface, pat down dough into a 1inch thick circle. Cut into 8 triangles with a sharp knife.

Place on a lined baking sheet. Bake at 400°F for 15-20 minutes until golden brown on top.

Move to a cooling rack. Serve topped with confectioners sugar.
