This cake looks fancy, but is actually simple!
Makes: 1 bundt cake, about 12 big slices
Pecan Topping (mix together aggressively):
1/2 c melted butter
1/2 c brown sugar
1/4 cup corn syrup
1/4 tsp salt
1 c chopped pecans
2 c white sugar
1/2 c vegetable oil
3 duck eggs
4 teaspoons vanilla
3 Tbsp sour cream
1/2 c milk
3 c flour
3 1/2 tsp baking powder
Combine sugar and oil. Add duck eggs, vanilla, sour cream, and milk.
Combine flour and baking powder in a separate bowl.
Slowly mix dry ingredients into the wet mixture.
Preheat oven to 350F. Grease Bundt pan.
Pack pecan mixture into bottom of pan. Add batter on top.
Bake 40-45 min.
Cool 10 min.
Turn over onto plate.
Pro-tip: remove all pecans that are stuck to the bottom of the pan after baking while still warm so that they won't be cemented onto the pan as it cools.
